I LOVE Black-eyed peas! Their texture, taste, and high nutritional value all make me smile when I eat them. Here’s an easy, yummy recipe for those of you looking for a Black-eyed pea alternative to the traditional, “Hopping John”. Feel free to add different vegetables and greens according to your taste preference. Enjoy!
1 C dried black-eyed peas
1 Large carrot chopped
1 celery stalk chopped
1 orange bell pepper chopped
½ onion chopped
2 cloves minced garlic
2 tsp ground cumin
1 T smoked paprika powder (I use La Chinata)
1 C frozen spinach (or a few handfuls of fresh – I didn’t have any today)
Salt & Pepper to taste
3 – 4 C water or Vegan Bouillon
1. Soak black-eyed peas overnight (skip this step and the next if you used canned peas)
2. Drain and rinse peas; bring to a boil in 3-4 Cups water/bouillon, then simmer until tender (about 45 – 60 minutes). Keep adding water if it cooks away
3. Add remaining ingredients; cook until vegetables are tender.
4. Add hot sauce if you choose. Serve with a smile : )
