Hello, vegan (and all other) foodies!

The thought of never eating a grilled cheese again sounds like a heinous crime. Alas, I have 2 recipes here to save you from such horrid acts. Not to mention, you aren’t clogging your arteries and you are consuming delicious veggies (which the traditional grilled cheese can’t claim).

Grilled Cheese Numero Uno

This is a take on a more traditional grilled cheese and, okay, I’ll put this out there… this recipe does require some pre-preparation. But, it is prep that can be done in bulk so all future cheesy fixes can be a quick fix. And it is WELL worth it! Believe me!

Pre-Prep
Butternut squash or sweet potatoes, peeled & cubed
Steam your cubed vegetables until soft enough to mash with a hand masher or you can puree them. Measure your mashed veggies into 1/2 cup amounts and bag individually into freezer bags and freeze them for future grilled cheese making.

Ingredients
(makes 2 sandwiches)
1/2 cup Daiya cheese shreds
1/2 cup sweet potato or butternut squash puree
1 tbsp. Earth Balance Butter
Salt, to taste
4 slices bread

Directions
Combine and stir together the Daiya, veggie puree, Earth Balance, & salt. Spread mixture across 2 bread slices (for 2 sandwiches). Pre-heat pan on medium to medium-high heat and spray with non-stick oil. Spread a little earth balance on the outside bread pieces. Place sandwiches in pan and cook 2-4 min. on each side (while pressing sandwich with spatula). Cook until bread is golden and cheese has become warm & gooey.

Grilled Cheese Numero Dos

This grilled cheese is decadent; a gourmet grilled cheese, if you will. Don’t let it being gourmet throw you off. It is a sandwich that can be put together quickly.

Ingredients
(makes 2 sandwiches)
1/4 cup chopped fresh broccoli
1 clove garlic, chopped
2 tbsp. onion, chopped
2 tbsp. Tofutti cream cheese
1/2 cup Daiya cheese shreds
4 slices bread
Salt & pepper, to taste
Olive oil

Directions
In a pan, drizzle a bit of olive oil to sautee the chopped broccoli, garlic & onion. Cook on medium heat until vegetables soften a bit and lightly browned. Transfer cooked veggies to a bowl and stir to combine with the Tofutti cream cheese, Daiya, salt & pepper. Spread mixture across 2 bread slices (for 2 sandwiches). Pre-heat pan on medium to medium-high heat and drizzle a bit more olive oil. Place sandwiches in pan and cook 2-4 min. on each side (while pressing sandwich with spatula). Cook until bread is golden and cheese has become warm & gooey.

Tips for making a grilled cheese

Struggling to get the middle gooey enough without over browning the bread? Here are a few methods.

OPTION 1
Spread the mixture across bread slices and broil open faced in the oven until cheese mixture is gooey then proceed cooking in pan to brown the bread.

OPTION 2
Cook in pan as usual until bread is browned the way you like. Transfer sandwiches to plate and heat in microwave about 10 seconds to get cheese mixture gooey.

OPTION 3
Cook in pan on a lower heat (think low & slow) while pressing sandwich. Do this until cheese mixture becomes warm & gooey. Then turn up the heat to brown bread a bit more, if needed.
